Parmesan Prosciutto Omelet

Don't let the concept of an omelet scare you. If you are not comfortable flipping it, simply make it as a scramble and stir and turn just until all of the liquid is firm. You can also spray a microwave proof bowl with cooking spray, place all the indgredients in it and microwave for 2-3 minutes, based on amount. Continue to add seconds until firm. Enjoy!

  • 3/4 cup Nulaid Reddi-eggs (from Trader Joe's)
  • One slice sweet onion, chopped
  • 1/2 tube Volpi prosciutto kisses (from TJ's)
  • 1/3 cup shredded parmesan cheese (from TJ's)
  • cooking spray
  • handful of baby spinich (optional)

1. Spray a 6-8 inch omelet pan or light non stick frying pan with a coating of the cooking spray. Saute the onion for a minute, then add the prosciutto and break it up with a fork, and cook until slightly browned. Add the slightly chopped spinach, if using.

2. Pour in the egg mixture and let cook for a minute. Using a silicone spatula, gently lift the egdes and tilt the pan to allow the eggs to run underneth and contact the pan. Continue until no more egg runs off. Sprinke the cheese evenly over the eggs, then (over the sink) swirl the pan to lossen the omelet , then with a quick flip of the wrist, flip it so that the entire omelet is turned over. Cook this side for another minute, then slide the omelet on to a plate and turn the pan so that it folds the omelet in half. This allows the cheese to form a nicely browned surface that really makes the omelet beautiful and adds a very nice flavor.

3. If you are not a meat eater, chop pitted kalamata olives ( from TJ's) and add more spinich. Prepare the same way for a very nice variation. I alternate them to keep breakfast interesting.
